Cannabis Christmas Sugar Cookies

Recipe:
3 c flour
1 Tbls cornstarch
1 tsp baking powder
1/2 tsp salt
1 C Cannabutter (or do half canna and half regular butter)
1 C sugar
1/4 C applesauce
2 tsp vanilla

Icing:
1.5 C powdered sugar
1 Tbls butter, melted
1/2 Tbls non-dairy milk

Instructions for Cookies:

– Preheat oven to 350
– Combine flour, baking powder, cornstarch and salt in one bowl
– In separate bowl, soften all butter and add sugar, mix with hand mixer until fluffy
– Add vanilla and applesauce to butter and remix
– Slowly add dry ingredients into butter mixture until combined
– Roll into a ball and place in fridge for 20 mins
– Roll dough out between parchment sheets until 1/4 inch thick and cut cookies out (may need to re-chill if dough gets too soft)
– Chill cutouts in fridge for a few mins before baking

Bake for 9-12 mins, let cool completely before icing!

Hi, everyone, and welcome to the Educated Edibilista. We are on episode eight already.

Jane:
Crazy.

Mary:
Super crazy, yeah. So what are we doing today?

Jane:
We’re baking!

Mary:
Oh, lovely.

Jane:
‘Tis the season, so we thought we would make some sugar cookies. And of course, we have our pot leaf cookie cutter.

Mary:
And Jane had to extra with some sprinkles and green icing.

Jane:
Oh, yeah.

Mary:
So we made our vegan cannabutter last episode with the LĒVO, which was pretty cool.

Jane:
That was pretty cool. It turned out really nicely. And we’re going to include a photo of what it looked like when it solidified again.

Mary:
Yes, so you guys can see that right above here.

Jane:
Yep.

Mary:
It turned out fabulous. The interesting thing I thought was you really couldn’t smell it when it was cold in the refrigerator, but then when we started heating it up-

Jane:
To bake today, you could definitely smell it.

Mary:
Very, very interesting, so yeah.

Jane:
Yeah, the things you learn.

Mary:
Yeah. So we decided, instead of cannabread, which I really wanted to do, but-

We’re still going to do that. We’re still going to do that.

Mary:
… we will still do that, but since it is December, sugar cookies, got to do sugar cookies.

Jane:
We’re excited.

Mary:
Yeah. So let’s hop into it. We’re going to step back here and get everything situated, and then come back here and roll out and go from there. So let’s take a look at the ingredients.

Jane:
Woo-hoo!

Mary:
Okay, guys, so now we are combining our vegan butter with the cannabis in it, with the sugar and vanilla. And it’s looking pretty so far.

Jane:
Light and fluffy.

Mary:
Yeah. So what do we need to add? The vanilla still?

Jane:
Yep. Two teaspoons of vanilla.

Mary:
Two teaspoons of vanilla.

Jane:
Here it goes. There’s one.

Mary:
I love vanilla.

Jane:
Me too, I love it.

Mary:
We can always add a little more.

Jane:
It smells so good. Oh, what the heck, little more.

Mary:

Jane:
Definitely, it’s going to be the magic ingredient.

Mary:
Okay, guys, now to mix this up.

Jane:
And the apple sauce.

Mary:
And the apple sauce, a quarter cup.

Jane:
Yep. Let me scrape that out of there.

Mary:
We are making this vegan, so that’s why we have all these other options.

Jane:
And we are following a recipe, just so you know. We’re not just…

Mary:
We have it down there for you.

Jane:
We make a lot of stuff up as we go, but this is not one of them.

Mary:
Cooking and baking I cannot make up.

Jane:
Nope.

Mary:
There we go.

Jane:
Here we go.

Mary:
All right.

Jane:
Dry ingredients.

Mary:
It’s going to make a lot of freaking cookies.

Jane:
Oh my goodness.

Mary:
I’m so excited.

Jane:
Okay.

Mary:
Let’s share with people.

Jane:
Here we go.

Mary:
Okay. So just do a little bit.

Jane:
Okay, add just little at a time. Yep.

Mary:
Yeah, so it doesn’t fly once I start.

Jane:
Right.

Mary:
So the recipe says what? 24 cookies?

Jane:
24. And we were a little unsure that we would get 24 based on the size of our cookie cutter.

Mary:
The size is, yeah.

Jane:
But we might. It looks like a lot of dough.

Mary:
Yeah.

Mary:
Okay, guys.

Jane:
We’re back.

Mary:
So look at this. It is gorgeous. So we have to roll it out, so we’re doing the thin sugar cookies. So we’re going to do half and then the other half. Now, we said earlier, supposed to be around 24 cookies, so that’s kind of what we based the math on. So I’ll go over that while Jane starts rolling.

Jane:
I’m excited.

Mary:
Let her do it.

Jane:
I make no promises about the outcome.

Mary:
Yeah, so let’s cut it in half.

Jane:
Yeah, so be very scientific here.

Mary:
Exactly. Yeah. So if you guys remember, we did three and a half grams of cannabis into the butter. So you multiply the grams by a thousand to get the total amount of THC in the butter. So that would be 3,500 milligrams, okay? Now the THC, cannabis, isn’t all THC, so we’re kind of guesstimating because we really don’t know. Most strains of today’s strains are much stronger than if you were smoking decades ago, so they say around 20 to 23-ish percent. We did our math at 20%, just to be a little safe.

Mary:
So we’re sandwiching here. She’s on the ball, love it.

Jane:
Oh, yeah. We’ll see. We’re going to squish it down just a little here before we start rolling. It says to roll it to about a quarter of an inch thickness, so we’ll see.

Mary:
And we got the mini little roller. It’s so cute.

Jane:
Yes, no lethal weapons in use here. It’s adorable.

Mary:
Okay. So at 20%, that means we take the 3,500, divide that by 20%, we get 700 milligrams of THC. So then we need to figure out how much of that, all of it in this case, is going into the recipe, and then how many servings it is to figure out how many milligrams are in each serving. So if it’s 24 cookies, if that is what we end up with, it’s going to be about 29 milligrams of THC, which for us in an edible is a little high.

Jane:
Seems like a lot.

Mary:
Yeah. So we’ll probably start with half of a cookie to test it, see what happens.

Jane:
Right.

Mary:
Yeah. But with edibles always, always, always start small and give yourself a lot of time.

Jane:
Absolutely.

Mary:
For me, it’s 45 minutes to an hour I start feeling stuff.

Jane:
Yeah. And I feel like it depends on what it is. And by the time I notice that I’m feeling something, I suspect it probably started earlier.

Mary:
Earlier, yes. Sometimes I just forget that I like, because I forget everything.

Jane:
Middle age, hello.

Mary:
Yes. So my husband sometimes doesn’t feel stuff for two hours, so completely different for everybody.

Jane:
Yeah. So you definitely know don’t base it off of someone else.

Mary:
Yeah, if it’s your first time, I would wait two hours minimum-

Jane:
Agreed.

Mary:
… just so you don’t overdo it. Yeah, so…

Jane:
I’m going to say this is probably good.

Mary:
I think that’s pretty thin.

Jane:
Yeah.

Mary:
I wouldn’t any thinner.

Jane:
We’ll let that one go, and we’ll do the other half.

Mary:
All righty. Have a whole system going.

Jane:
Oh, yeah, assembly line here. Thank you, Mary.

Mary:
Okay. We’re going to show you the cutouts in just a minute.

Mary:
… to roll it out, let that sit in the freezer for a few minutes to let it get hard. Cut them out. Look, we got a first one.

Jane:
Woo-hoo!

Mary:
We’re going to do the rest, and then we’re going to throw them in the freezer again for a couple minutes, that way they don’t spread out a lot.

Mary:
Hey guys, we’re back. Finished baking, so-

Jane:
Aren’t they awesome?

Mary:
Oh my gosh, so pretty. We got our little marijuana sugar leaf-

Jane:
Ooh, get them back on there.

Mary:
… cookie cutters. And we did some circles as well. That cookie cutter was a little hard to get out, because of all the points. So we did a pretty good job. They turned out pretty good.

Jane:
Yeah. I think we got better at it as we went. The first one was maybe not-

Mary:
Do not skip putting them in the freezer, before you bake them because that definitely helps.

Jane:
And you may have to refreeze the dough for a little while-

Mary:
As your working too much.

Jane:
… once you put all scraps back together and try to roll it out again.

Mary:
If it’s really soft, just does not work. So how many did we actually end up with? We said 24.

Jane:
It turned out to be 40 cookies. And these are not small.

Mary:
We have a lot of cookies to share.

Jane:
These are not small.

Mary:
They’re not.

Jane:
I mean, that’s probably a three-inch circle.

Mary:
Yeah. It’s a normal cookie size. Yeah.

Jane:
Yeah.

Mary:
So that took the milligrams down. We redid the math to 17.5 milligrams per cookie. Now it’ll be a little probably less on the little circle ones.

Jane:
I don’t know.

Mary:
I mean, they might be about the same surface area.

Jane:
It’s hard to say. I’d be curious to weigh them and see how close they were.

Mary:
Yeah.

Jane:
I feel like they’re not that different.

Mary:
They’re not different, because they have all the cutouts, so. You guys, when we’re making edibles, we don’t really have time to try them while on film. And we wait to see what happens. So what we’re going to do…

Jane:
Right, film batteries would not last that long.

Mary:
No, and I have shit to do.

Jane:
Well that, I mean, yes.

Mary:
We both have shit to do.

Jane:

Mary:
So basically, what we’re going to do is try one later ourselves, and then we will do a little video of our personal experience separately.

Jane:
Hopefully, we don’t forget to do that.

Mary:
Hopefully not. And then we’ll post it on Instagram and Facebook, so you guys can go see that later, see what we thought. We’ll probably mention it in our next video as well. But at least you’ll get a little update before that next longer video comes out, so.

Jane:
Now for the fun part. We get to ice our cookies and make them extra pretty. So Mary, would you like to do the honors of the first one?

Mary:
I am going to love this. This is my favorite part actually.

Jane:
Yes, so fun.

I mean, I’m not artistic at all, so some of my friends that are bakers, don’t look at this.

Jane:
So pretty. You got to do the sprinkles.

Mary:

Yes. I was having a moment in the parking lot of the grocery store the other day, when I realized I’d forgotten to buy the green sugar. Then I’m texting Mary saying, “Oh my gosh, I didn’t get it. Do I have to go back in?” But as it turned out, I did have some at home, so…

Mary:
Look at that. So pretty.

Jane:
Oh my gosh, I love it.

Mary:
Hey, guys, hopefully the cookie doesn’t fall apart.

Jane:
Oh, and yeah.

Mary:
Look how awesome it is.

Jane:
That’s amazing. Also, pro tip, make sure your cookies are completely cool before you ice them, otherwise you’re going to have a big old icing mess on your hands.

Mary:
A hot mess.

Jane:
Mm-hmm (affirmative).

Mary:
Yes, exactly. I mean, honestly looking at these, I think they turned out perfectly for our first time.

Jane:
Yes, absolutely.

Mary:
They mentioned your butter and stuff may separate once you’re adding stuff, but everything turned out fabulous. The dough was right on.

Jane:
Sorry, you know me with my over OCD over here.

Mary:
The artist over here has to be perfect. Yeah, so I’m super excited at the results of our first time.

Jane:
Me too, I think they turned out really nicely. Yeah, I think they turned out really nicely.

Mary:
